Soup Sunday: French Onion

Hello my peoples!
All of our Christmas decorations are officially down and the house feels empty :( But the good news is
it is our first Soup Sunday of 2014 and we are whipping up some french onion soup over here!
I used Tyler Florence's recipe and while it wasn't hard, it also wasn't as easy as the chicken tortilla soup. But it came out really delicious!
Here's what you need...
4 onions, sliced (I used yellow onions)
1/2 cup unsalted butter (1 stick)
2 garlic cloves, chopped
2 bay leaves
2 fresh thyme sprigs
kosher salt to taste
ground black pepper to taste
1 cup red wine
3 tablespoons all-purpose flour
2 quarts beef broth (64 oz - 2 small boxes)
1 baguette, sliced
1/2 lb grated gruyere cheese
And here's what you do...
Melt the butter in a large pot over medium heat. Once melted, add onions, garlic, bay leaves, thyme, salt & pepper.
Cook until the onions are soft and caramelized, at least 25 minutes.
Next, add the wine and bring to a boil. Once it boils, reduce heat and let simmer until the wine evaporates. This can take up to 15 minutes. Once the onions are drier and the wine has evaporated, remove the bay leaves and thyme sprigs.
Add flour and stir. Turn heat down to medium-low and let cook for 10 minutes.
Add all of beef broth and bring soup to a simmer for 10 minutes. Season to taste with more salt & pepper.
When you're ready to eat, preheat the broiler. Line a baking sheet with the sliced bread. Sprinkle cheese and broil for 3-5 minutes until melted and golden brown.
Place croutons in soup and dig in!
I think next time I'll attempt more of a restaurant style french onion with the ooey, gooey melted cheese all over the bowl. You can get this effect by toasting the bread sans cheese. Then add bread to bowl, cover with cheese (sliced may work better than grated) and place bowl in broiler. Broil 3-5 minutes or until cheese is melted.
Next up for Soup Sunday is baked potato! Mmmmmmm, yeahhhh.
