Hi my friends :)

We've got yet another flash flood warning over here in Murrrryland so Hadley and I are bunkering down. We'll most likely watch Frozen and How to Train Your Dragon for the 1000th time. I'm currently obsessed with both. Hadley loves singing and dancing to the songs. Her new favorite dance move is spinning around in circles.. it's so cute! I've got to try and catch it on video.

We've been staying busy over here and doing lots of yummy cooking so I wanted to share some of our favorite recipes and goodies lately!

[1]  All kale everything.

I've had kale before but lately I've been trying to feature it more in our meals instead of hiding it. This morning for breakfast I sautéed it with some olive oil, salt & pepper, garlic powder and some lemon juice. I put a bit more fresh lemon juice on before I ate it and it was delicious! I love that it keeps some texture after you saute it instead of becoming all mushy. And it's super filling... bonus!

I also put some in Hadley's breakfast smoothie with banana, milk, blueberries, strawberries and blackberries and she gobbled it up. That girl loves her blackberries! 

Last night for dinner we made a kale salad with cranberries, toasted pine nuts, goat cheese, bacon, grape tomatoes and a white balsamic vinaigrette. HOLY MOLY it was delicious. I don't usually get excited about salads but this one is definitely my new numba one. 

Another new favorite that we whipped up last night (not kale related) was an eggplant bake. You can find the recipe here. I love my grandma's eggplant parmesan that she makes and this reminds me of a slightly healthier version of it.

Last Friday we all went to a beautiful winery and had a picnic. There was live music and the weather was absolutely perfect. It was such a fun night! 

[4]  We got to use our brand new Oh Joy! for Target picnic basket at the winery.. I LOVE the bold summery colors! It's so cute and has plenty of room for all kinds of yummy goodies. 

[5] I stumbled across this awesome website on Pinterest. Since we'll be moving soon eventually I've been thinking about how we can set up each room with the furniture we have and what we'll need. This site is so helpful! If you ever watch HGTV, it's basically like those programs you see them use on their iPads when they're walking around redoing houses. You can put where your windows and doors are, the dimensions of each room, what furniture you'll put in there and more. It is AWESOME.

[7]  Over the weekend we also made delicious chocolate cherry muffins from Sally's Baking Addiction. If you haven't checked out her site make sure you have a gym membership first ;) She creates soooo many yummy sweets! 

However... did I mention these babies are LIGHT? 110 calories for each muffin. 

[8]  Honeysuckle. 

Who doesn't love honeysuckle?? Josh didn't know what it was when I mentioned it the other day and I was dumbfounded. SAY WHAT??? Must be a Montana thing. It grows like crazy here in Maryland and I love coming across it on our runs. It's such a nice, sweet surprise when I'm sweating profusely, ready to collapse and starving. 

I remember eating it in my grandmother's backyard when we were kids. My sister and I would run around back there in her "secret garden". I remember it felt just like that... there were bushes and plants everywhere. It was the best for hide and seek. And a sweet snack :)
