Lucy's kitchen: Veggie Sandwich

Thursday, July 31, 2014

Hey my peoples.

Hope all of you are having a wonderful week so far. Can you believe tomorrow is August 1st?? This summer has flown by and I am not okay with it. The weather has been especially beautiful in the nation's capital this week.. low humidity and lots of sunshine. We love it!

If you've been reading here for a while it's no surprise that I love to eat. And I really love to eat my grandma Lucy's Italian cooking. Some of my all time favorite recipes have come from her over the years (like this homemade tomato sauce) and I love collecting so many family recipes to one day pass to Hadley.

Last week while we we're visiting her she made me her Italian spin on a veggie sandwich. Pretty much everything she has made me is ridiculously good but this.... oh my god. Words cannot describe how delicious it is. Even you meat lovers (like myself) will drool for this sammy.

So without further ado...

Grandma Lucy's Veggie Sandwich

What you need

a nice loaf of bread (I used Italian but use your favorite!)
mozzarella cheese
balsamic vinegar
fresh thyme (dry herb works too)
black pepper
olive oil
1 clove garlic, crushed
1 summer squash, sliced
1 eggplant, sliced horizontally
1 sweet onion, thinly sliced
mushrooms, thinly sliced

What you do

Before we talk steps lets talk about these ingredients real quick. Since this is a pretty simple sandwich it will be best with the freshest of ingredients. I highly suggest some fresh baked bread, nice mozzarella and farm fresh veggies! If you don't have access to this, it is still yummy so don't fret!

Okay, now for da bizz-ness...

Preheat the oven to 400°.

Slice up two medium thick slices from your bread. You're gonna have some substantial filling so make sure it can hold it! But also don't make them too big that it overloads your filling... too much bread can kill a sammy! Bread to filling ratio is crucial people... CRUCIAL. Have I over analyzed this sandwich enough for you?

Mix together a 1/4 cup of mayo and a splash of balsamic vinegar. You can adjust to your liking. I've never had this combo before but it has quickly become my new favorite mayo. Spread on one side of each slice of bread and set aside.

Slice your eggplant and place on a greased baking sheet. Brush with olive oil and sprinkle black pepper and thyme over top. Roast in the oven for 25-30 minutes or until golden brown. Flip over half way through for even doneness.

Sauté your sliced onion, mushrooms and squash in olive oil, crushed garlic, black pepper and a bit of thyme. I made a huge batch for leftovers but if you want to make it for just one sandwich I would do only a small handful of each veggie. Cook until the onions are translucent and mushrooms+squash are tender and golden brown. I usually put the onions in for five minutes and then add the mushrooms and squash since they cook faster.

Once all the veggies are finished arrange them on one slide of bread. Place a few slices of mozzarella over top and a bit more thyme. Put in your toaster oven or broiler until bread is crispy and the cheese has melted.

Squish that melty goodness together and ENJOY.

I hope you all will try this bad boy out and love it as much as I do :)

Good morning friends :)

This weekend was our neighborhood BBQ and we had such a blast! We live in relatively new construction so many people don't know each other and several are still moving in. It was great to bring everyone together and really start to build that community bond.

We live in Anacostia, which is a part of DC that has been struggling to reduce crime and keep up economically with the rest of the district. Safety was one of our biggest concerns when we decided to stay here with Hadley and it feels so good to have many others around us who are looking out for each other and have the same concerns. Everyone we have met in our community and out and about on the streets have been so friendly and we really couldn't be more excited about this new chapter!

Our coffee table arrived and our new rug for the family room should be here early next week. I'm so happy about how it's all coming together.

Yesterday Hadley and I did a little more exploring downtown and found a playground. She was the only kid in there but didn't seem to mind... I think she liked having the slide all to herself.

We'll be spending the rest of the week with Josh's parents who are in town for a last minute business conference. We love surprises like that! Today we'll be hitting up the zoo and I'm sure a splash water park will be in our near future. I hope you guys are having a great week :)

Friday, I'm in love + Rug round up

Nice to see you Friday!!!

After this roller coaster of a week I am more pumped than ever for the weekend! Tomorrow we're hosting a big ole BBQ in our new neighborhood. They've been building these condos for the last two years and the street is finally complete. We've had a ton of new neighbors moving in and can't wait to meet everyone. On Sunday, Josh and I celebrate two years together :) So it should be a great weekend!

Hadley's as excited about Friday as the rest of us...

If you love her Friday, I'm in love shirt as much as I do you can find an adult version here!
Today I spent some time seriously scouring the internet for my favorite rugs. Our space is kind of interesting because when you come in to the main living area it's one giant, long room. In order to break that up and make it feel like two cozy spaces.. we definitely need some rugs.

So without further ado.. here's my rug round up!

One - This faux sheepskin rug from Home Decorators is so versatile and great for almost any room. We have it in Hadley's room right now and I love how it completes the space and ties everything together. It's so soft on your footsies and reasonably priced! The only downside to having a white rug is obviously dirt so watch those shoes people (cough... Josh... cough).

Two - I love all of the colors in this rug by Joss & Main. And PSSST, they're having a HUGE summer sale right now on tons of rugs and other great pieces!!! It ends Sunday so hop to it folks! I may or may not have already purchased this for our family room. Hint: I totes did. I'm a little nervous that it may be too much but we don't have much color in there now so I think it will be perfect for brightening everything up!

Three - So this is called the "Emotirug" which just kills me. Land of Nod, you so funny. I love this for a play room, nursery or little girl's room. So much fun!

Four - Target delivers with this classic pattern and some great color choices. This would be great for a room where there's already lots of color going on and you need something simple. You can never go wrong with this look!

Five - Last but not least, this beauty from West Elm is another simple pattern yet it really draws you in. It almost looks as if it's moving. I also really love this yellow color to warm up a room.

I hope this helps if any of you are on the rug hunt like myself :)

Have a great Friday everyone!

Mommy mayhem

So after the tub poopisode on Monday, I thought things might start looking up. I mean... Hadley has never poo'ed herself in the bathtub before so that's gotta be like my one shitstorm (no pun intended) of the week right?

This week has been absolute hell. What day is it.... WEDNESDAY?????

And to be completely honest with you, I feel like the last couple of weeks with Hadley have been really hard.

I don't know if it's because she's clingier than ever, misbehaving more than usual and getting into everything or if my fuse has just all of the sudden shrunk.. but it's been a real adjustment. And admitting that to you/anyone is so hard. Embarrassing really. As a mom, I always want to have everything together. I want Hadley to be happy and healthy, smiling and having a good time. And I want to be too. But the truth is it's not always like that.

Tonight, I was sitting in the guest bathroom giving Hadley a bath (ours still needs to be bleached...) thinking about writing this post. And praying that she didn't let any more terds fly. I was thinking about how whiny she had been today, how she spilled water all over my grandma's new computer and how she screamed like she was being attacked almost the entire way home. A good 30 minutes of earth rattling screams. I was thinking about how I can feel my blood pressure rise during those situations... I grit my teeth and want so badly to throw something into the wall as hard as I can. Talk about a temper, aye?

And then... I got Hadley out of the bath, changed her into her PJs and proceeded to fall down the stairs. With her in my arms.

Luckily, I have a huge ass.
So that broke the fall.

When it rains it pours right?

So yeah, today was shit. The last couple of weeks have been hard and I wish I could say I knew exactly why or how to fix it or how to be the best, most fun mom in the world. But I don't. And as frustrating as these moments are, I know it's okay. These things happen... none of us are perfect. Especially us moms doing the best we can with our crazy babies. The most important part is that we wake up the next day and do it all over again with a fresh perspective. Basically, today doesn't have to suck as bad as yesterday.

I took Hadley into her room tonight and read her a story. Then I laid on the floor for a little while she played. Then she came over to me and wrapped her little arms around my neck as hard as she could. She hugged me over and over for 10 minutes. And I felt immensely better. Moments like that always erase the shit in the tub and the ass plants down the stairs.

Hadley girl, no matter how bonkers you make me, I love you more than you'll ever know!

Goodnight my friends,

Weekend shenanigans

Monday, July 21, 2014

Oh Monday, you were oh so kind to me today.

Case in point.......

Yeah so, that's how things have been going over here.
At least we managed to get a few cute bath shots before the floaters appeared...

Besides today being a total SHITshow (okay it's kind of funny now) we had a fabulous weekend over here with our visitors and some new friends :)

Hadley was surrounded by young gals and she was in heaven. She played all day on Saturday until she dropped and so did we. I loved watching her interact with the other kids and run around the yard in her bathing suit diaper birthday suit. Great fun had by all!

I hope you guys had an awesome weekend :)
