Yogurt parfait popsicles

I promised a popsicle post earlier this week and here I am to deliver that to you!!!! Not only is it a popsicle, my friends, it's a popsicle you can eat for breakfast and not feel like a total fat ARSE. 
Bonus points for dat.

These are super easy to make and you most likely have lots of ingredients already in your fridge and pantry. 

What you need...

yogurt, we used vanilla greek yogurt
fruit of your choosing, we used strawberries, blueberries and kiwi
milk, optional

What you do...

Fill your popsicle molds with a bit of yogurt, then a few pieces of fruit, followed by more yogurt. The greek yogurt we used was pretty thick so I mixed it with some milk to make sure it filled in the entire mold.

Once you've filled your mold almost to the top with yogurt and fruit, finish it off with a layer of granola. We poured some warm honey over the top of the granola to finish it off. 

Seal your molds and place in the freezer for 4-6 hours, or until frozen through.

Once they're finished, run the mold under warm water and wiggle it until the popsicle slides out.

You can have these bad boys put together so quickly but I will warn you, that granola is messy as some shit with a 2 year old!!!! I'm still finding pieces a week later. At least our pup is happy about it.
