Soup Sunday: Butternut Squash

Soup Sunday made a big comeback last weekend and I am so pumped about it! 

I've always been an uber soup fan and when Fall rolls around I crave it more than ever. 

This past weekend I made a Fall favorite, Butternut Squash. 

Honestly, I hate a Butternut Squash. That little minx is so hard hard to peel and chop. I was literally sweating trying to prep it. So I highly suggest buying some precut at the store if you can. But honestly, even after all the sweating and cursing.. that soup was damn good and damn worth it!

 -------- What you need  --------

1 medium butternut squash, peeled & chopped
1 small onion, chopped
1 stalk celery, chopped
1 medium carrot, peeled & chopped
2 medium potatoes, peeled & cubed
2 tbsps butter
1 box chicken stock

 -------- What you do  --------

Melt the butter in a large pot.

Add the onion, celery, carrot, potatoes and squash to the pot. Season with salt and pepper. Cook until the vegetables begin to brown a bit. 

Pour in enough chicken stock to cover the vegetables and bring to a boil.

Reduce the heat to simmer, cover and continue to simmer for 40 minutes or until vegetables are tender.

Use a hand blender or transfer soup to a blender and blend until smooth.

Add more broth if you'd like a thinner soup.

Season with additional salt and pepper as needed.


This past Sunday I made this recipe without the potatoes because I didn't have any on hand. I added more celery, carrots and squash to it and it still came out delicious.
